I was surprised by how good the food is in Borneo considering it has a very specific climate (hot). The curries have a lot of depth and flavour and fresh fish (and other surprising types of seafood) are served in a variety of ways. My favourite was the fried stingray with chilli garlic sauce! Beef and goat curries are other popular dishes and despite pork being a forbidden food by the dense Muslim population the Chinese love it and serve it in the most delicious and creative ways.
